A subpage is a "child" of a page on the wiki. Any page where subpages are allowed can have subpages. Subpages can even have their own subpages.
Subpages are allowed in every namespace except Main (where normal articles go).

A subpage is a child of an existing page, which is its parent. For example, if I am editing my user page and it's getting way too long, I could make subpages for different topics. If my user page is User:SomeGuy and I want a subpage about cheese, I would create the page User:SomeGuy/Cheese.
[edit] Linking to subpages
I'll use the cheese example to illustrate how to link to subpages.
| To make a subpage of the current page you're editing, link to it like this: | [[/Cheese]]

| To link to a subpage from any page other than its parent, use the full link: | [[User:SomeGuy/Cheese]]

In either case, if you want the link text to be something different, put the text you want after a | character:
| [[User:SomeGuy/Cheese|All about cheese]]

DO NOT put a space in front of the slash character [[ /like this]]. This is bad form and can break things.
In fact, you should never use excess spaces in your wiki links. Linking [[ like this ]] is very bad style (and used to cause all kinds of bugs before one class on UMassWiki smoked them out and caused the developers to fix them).
